CREMAET

To be understood, cremaet is the Valencian carajillo. Cremaet means “burnt” in Spanish. And why cremaet? Because the rum is burnt to reduce its alcohol content while it is infused with cinnamon sticks, lemon peel, sugar and coffee beans, just as is done with the eau-de-vie of the Galician queimada. Once the rum is burnt, the espresso coffee is added, so that two phases are formed in the glass, the coffee and the rum, which have different densities. There is nothing better to end a good esmorzar, lunch or dinner!
