Vaqueta Gastro Mercat

Our history

Vaqueta is the second restaurant of the Gastro Trinquet Group in the city of Valencia. Close to the Mercat Central, the gastronomic offer is inspired by fresh local produce. The menu is made up of dishes meant for people to share, Valencian rice dishes, matured meats and a sushi bar with a Mediterranean touch. The kitchen, planned by Pablo Margós, is headed by Agus Romanó.

Our greengrocer's leads into the restaurant. Once inside, everything is designed to immerse you in Valencian tradition and contemporary design: the interior design by Janfri&Ranchal, the vareta wood lamps by the Fallas artist Manolo García, the menus illustrated by Lawerta, the spectacular KOI lamp by LZF, the embroidered tapestries by Arquicostura… everything has a Valencian signature.

Agus Romanó's suggestion

Dry-aged beef steak tartar with potatoes in egg yolk. Although this is a classic dish that is very well known nowadays, I love the version we prepare at Vaqueta. We use dry-aged beef and season it with mustard, a touch of spice and a little mayonnaise. We finish the steak tartar with fried potatoes seasoned with cured egg yolk.

Terrace /

The terrace on Avenida María Cristina has views of the Mercat Centralof València. Ideal for a drink at any time of the day or to have lunch and dinner outdoors. and dine outdoors.



Social Table /

With a capacity for up to 10 people, our social table is located at the entrance to the restaurant, in Carrer de la Bona Cuina, just next to the greengrocer's shop. It is a space isolated from the rest of the restaurant, presided over by a tapestry of Valencian oranges, created by Arquicostura Studio.

Main Dining Room /

Our main dining room has a capacity for 75 capacity for 75 people, distributed in different spaces and heights throughout the ground floor of the the entire ground floor of the Vaqueta.

The Safe Box /

If you are looking for more privacy, we offer you the Saló La Caixa the Saló La Caixa: a totally private dining room with a capacity for 6 people, presided over by an old safe that we have for 6 people, presided over by an old safe that we have preserved during the refurbishment of the building.

Artichoke /

Presided over by the Artichoke lamp by Louis Poulsen we find the Carxofa Private, with capacity for 10 diners. This private dining room provides a touch of privacy without being completely isolated from the rhythm of the restaurant thanks to the design lattice that frames it.

Chef's Table /

This is the most exclusive corner of Vaqueta Gastro Mercat. It is a chef's table with a capacity for 16 diners where you can experience the cuisine at first hand: our chefs cook in front of the diners while they explain the dishes.
