Although paella is the most universal Valencian dish and the one that gets all the fame and admiration, we almost dare say that there is a dish that we Valencians like more than paella: baked rice. We have recently incorporated it into the menus of our restaurants. Although the ingredients vary depending on the region, these are the most common ingredients: rice, pork ribs, bacon, onion black pudding, tomato, potato, chickpeas and dried garlic. The terracotta pots we use are handmade and hand-painted by the renowned ceramist from Alzira, Xavier Claur, awarded Best Artisan of the Valencian Community by the Chamber of Commerce in 2000.
